Oven 350 deg F

Free range turkey 25mins per kg
Commercially raised turkey 35-40 mins per kg

Chop dried cranberries fine with thyme, add salt and pepper
Incorporate into soft butter. Can make ahead and refridgerate.

Dry turkey..Separate breast skin on each side with spatula, put cranberry butter under the skin. Use extra butter to cover the whole bird. Add fresh thyme in the cavity. Cover with foil.
Put giblets in bottom of roasting pan with some extra thyme.

Roast for 2 hrs. Bring out and baste and add bacon on the breast area.
Cook for remainder of the time.
